The available evidence comes primarily from in vitro cell models, simulated digestion experiments, microbial analyses, and perspective or review articles rather than from randomized controlled trials in humans, which represents a significant limitation when drawing conclusions about real-world health effects. One cell-based study showed mixed signals, finding that sauerkraut brine simultaneously activated both pro- and anti-inflammatory pathways, underscoring that the full picture is not yet settled and that well-designed human clinical trials are still needed before firm conclusions can be drawn.
