Studies also indicate that choline functions as a methyl-donor nutrient involved in one-carbon metabolism, where it contributes to epigenetic regulation of gene expression in the brain, and multiple reviews suggest that deficiencies during critical developmental windows may have lasting consequences for cognitive and mental health outcomes.
